Perle Noire

Wine Making Process : Traditional vinification at 27°C in thermoregulated vats with a long 27 day-maceration for better extraction of the colours, solid matter and tannins. Automatic malolactic fermentation in concrete vats. The wines are racked 2 or 3 times but are not fined or filtered. Maturation for 12 months in 0 to 1-year-old Burgundian barrels. Plate-filtered once before bottling.

Palate and Nose : Dark grenat colour. This wine displays an intense nose with pepper, black fruit , blackberry, currant aromas and strawberry marmalade. The midpalate is complex, intense, round and soft with delicate and subtle tannins. Good balance and length in mouth with oak notes, liquorice and black fruits. Partners filet mignon with green pepper, red meats in general and game very well.
