La Clappe – Rouge Aop

Wine Making Process : Traditional vinification thermoregulated at 27°C for 14 days. Malolactic fermentation in vats with automatic getting underway at 28°C. Then racked 2 or 3 times and fined once. Maturation in vats before bottling.

Palate and Nose : Clean nose with elegant and complex red fruit, morello cherry, peppermint and cinnamon notes. Clear attack, full mouth, velvety and spicy (pepper) on stewed fruit. Appetizer wine which also partners beef, poultry and white meat.
