Cuvée du Castrum

Wine Making Process : Classic vinification by direct pressing. Barrel fermentation. Malolactic fermentation blocked. Maturation for 12 months in Burgundian barrels (300L). Stirred to keep the lees in suspension until racking for the last time. Plate-filtered once before bottling.
